FOR THE FILLING
2 3/4 cups fresh ricotta cheese
3/4 cup confectioners’ sugar
3/4 teaspoon pure vanilla extract
3/4 teaspoon finely grated orange zest
1/4 teaspoon fresh lemon juice
With an electric mixer on medium speed, beat ricotta and confectioners’ sugar until fluffy. Beat in vanilla, zest, and lemon juice. Cover with plastic wrap, and refrigerate.
Transfer mixture to a pastry bag or a re-sealable plastic bag, snipping the corner off to create a homemade pastry bag. Squeeze the ricotta mixture into each of the sugar cones.
